Recipe for delicious sweet banana and berry strudel with coconut custard
A strudel is a treat for young and old alike!Although most of us know the strudel thanks to the apple strudel and we associate it with a traditional Austrian or German pastry, it is actually originally Arabian, with baklava being the best known version.
Strudel literally means ‘whirlpool’, and that is exactly how the pastry is created.Today you can find many recipes for strudels, ranging from savoury through to sweet.Sometimes we just feel like a treat, something sweet that is also fun to make, both for you and for the kids.That makes this the perfect recipe that surely everybody will love!
Recipe for delicious sweet banana and berry strudel with coconut custard
Serves 2
Strudel ingredients
1 packet of puff pastry
300 ml coconut milk
2 bananas
1 vanilla pod
8 tbsp coconut blossom sugar
3 tbsp corn starch
1 tbsp Cocoslove coconut oil

How to prepare the strudel
Place the coconut milk in a large pan.Halve the vanilla pod and remove the pulp.Add, together with the pod, to the milk and slowly bring to the boil on low heat.
Mix the corn starch and the coconut blossom sugar into the coconut milk, stirring out any lumps.As soon as the coconut milk starts to boil, stir continuously with a whisk for 4-5 minutes and let simmer gently.Once the custard is thick, remove from the fire and allow to cool.
Remove the puff pastry from the fridge 20 minutes before using it, roll it out and preheat the oven to 200 °C.
Use a spatula to spread the cooled coconut custard evenly over the puff pastry. Peel and slice the bananas, then halve them and scatter approximately two-thirds over the puff pastry, together with the berries.Carefully roll the pastry up.Seal the ends and dribble a little coconut oil over the pastry (heat the oil briefly so that it is fluid) and sprinkle some coconut blossom sugar over.Bake in the preheated oven for 25-30 minutes.
Once cooked, leave to cool in the oven for around 2 hours and then carefully cut it.Garnish with the rest of the bananas and some crushed pistachios. A wonderful dish for young and old alike!
