Recipe for cookies with muesli, dates and chia seeds
Makes around 15 cookies
Ingredients for healthy cookies
100 g soft dates
1 cup of hazelnut milk
100 g coconut blossom sugar
50 g raw cane sugar
250 g muesli (roughly chopped in a blender)
50 g chia seeds
200 g wholegrain flour
a pinch of Fleur de sel
1 tbls. Cocoslove coconut oil
150 g chopped hazelnuts
1 pack of edible paper (circle-shaped or cut into circles)
How to prepare the healthy cookies
Preheat the oven to 180 °C and cover the baking tray with baking paper. Spread the leaves of edible paper on it, leaving enough space between them.
Place all the dry ingredients in a large bowl and mix well. Pit the dates and roughly chop them.
Add the nut milk and the coconut oil to the dry ingredients and mix rapidly and firmly.Then add the chopped nuts and dates.Leave to rest for a minute and then place small amounts of the mixture on the edible paper using a tablespoon, making sure there is enough space between the cookies.Flatten a little using a wet spoon.
Bake in the preheated oven for around 15-20 minutes and allow to cool.
