Healthy deep-frying?Then use this recipe for potato slices fried in coconut oil with pistachios nuts
If you’ve never heard of deep-frying using coconut oil, you don’t know what you’re missing. When you fry with coconut oil your food is not only much nicer (that’s what we at Cocoslove think), it’s also a lot healthier.That’s because coconut oil is a saturated fat, making it perfect for heating and thus also for deep-frying.Without your health suffering, you still get all the benefits of the coconut oil that attaches itself to your French fries, or, in this recipe your potato slices.
Tip:If you don’t have a fryer you can use a wok pan.You’ll also need a little less oil.
Recipe for potato slices deep-fried in coconut oil with pistachios nuts
Serves 4-6
Ingredients for deep-fried potato slices
500 g new potatoes
1 bag of roasted and salted pistachio nuts
Fleur de sel
Pepper
1 L Cocoslove coconut oil, sufficient for deep-frying
Preparing the deep-fried potato slices
Add around 1 litre of coconut oil to a tall pot or fryer.Heat up slowly until it reaches around 180 °C.When you heat the oil slowly it won’t burn and the coconut oil will slowly become liquid.
Roughly chop up the pistachio nuts.Wash the potatoes well and scrub them, let drain, dry and then quarter them.
Deep-fry the potatoes in the coconut oil until they are golden brown.Lay a piece of kitchen towel in the bottom of a bowl and place the potatoes on it to absorb excess oil.Remove the paper and scatter the chopped pistachio nuts, some fleur de sel and some pepper over them.Serve with homemade ketchup.
